Having two chefs running the same kitchen means consistency in well balanced and beautifully presented dishes. Spinnaker's Executive Chef, Ivan Ergović shares his passion and enthusiasm with every member of the staff, producing subtle, clean and enjoyable flavour palettes in his own distinctive style. He teamed up with Chef Goran Hrastovčak who took part in a 10 month Heinz Beck masterclass in Rome, picking up trends and technologies dominating contemporary cuisine and has since incorporated them in the Spinnaker menu.

To build this menu we started with well known local dishes and cooking techniques and experimented with pairing unexpected, surprising ingredients. We taste, change the seasoning or preparation technique until we craft a perfect plate, down to every drop of precious Istrian olive oil. Every dish on the menu is a precise little cooking miracle.
