Chef Marko Turković finds inspiration not in repeating tradition, but in the ingredient itself. His kitchen centres on fish and the way technique and precise cooking can reveal its full potential. He often chooses species others overlook, searching for new ways to understand the sea on the plate.

Ivan Maljevac

Ivan Maljevac leads the dining room with a discipline shaped in some of the world’s most demanding service environments. From butler academies and the Paris hotels Ritz and Crillon to private residences, his craft leaves nothing to chance. As a sommelier for wine, sake, and tea, he has built a programme designed not to accompany Marko’s food, but to complete it.
